Buffalo Chicken Salad for One

If you love salad like I do, then you will love this loaded Buffalo Chicken Salad topped with my Homemade Greek Yogurt Ranch!  This single serving salad will leave you full and satisfied!  It's loaded with veggies, chicken, and savory blue cheese in every bite!

Salads are one of those meals that are so easy to make but can really pack on the calories if you're not careful.  I like to load my salads with veggies to make them super filling and nutritious.  This buffalo chicken salad is no exception!  We've got romaine, carrots, celery, tomatoes, and onion.  Not to mention lot's of protein from the chicken, blue cheese crumbles, and the homemade Greek Yogurt ranch dressing! it is truly packed with flavor!

One of my favorite salads to date is my salmon meal prep salad that is in my cookbook.  It is loaded with blue cheese, salmon, and a homemade Greek Yogurt blue cheese dressing.  You should definitely give it a try!

The thing I like about salads is it is really easy to make one serving, I just keep all of the components on hand and it is super quick to make.  For this buffalo chicken salad recipe, I keep cooked chicken ready to go in my refrigerator and I always have romaine, tomatoes, blue cheese, and carrots chopped and ready to go.   You are definitely going to want to keep my Greek Yogurt ranch dressing on hand at all times because it is only 24 calories per serving and so delicious!

Ingredients needed

4 ounces cooked skinless chicken breast, chopped - I like to keep roasted boneless skinless chicken breast in my refrigerator at all times that are just seasoned with just kosher salt and black pepper.  I either use that or I have frozen already cooked chicken breast dices that you can find in the freezer section of most grocery stores. You could even use a rotisserie chicken to save time!

¼ cup buffalo sauce - you could make your own buffalo wing sauce using hot sauce and butter, but for simplicity, just buy it.  I am not loyal to anyone brand.  They all taste the same to me!

3 cups chopped or shredded romaine - You can buy heads of romaine lettuce for this buffalo chicken salad, or you can buy it already shredded in the grocery store.

¼ cup blue cheese crumbles - I am obsessed with blue cheese crumbles on salads and what pairs more perfectly with buffalo chicken?

⅓ cup halved cherry tomatoes - I always have some kind of tomato in my refrigerator so if you don't have cherry tomatoes, and diced tomato or grape tomatoes will be perfect.

1 small piece of red onion, thinly sliced 

2 tablespoons chopped celery - I like to chop my celery at the beginning of the week and then just add it to my salads all week!

¼ cup shredded carrot - I buy my carrots already shredded because it just makes life so much easier!

¼ avocado, sliced

2 tablespoons Greek Yogurt homemade ranch dressing - My homemade Greek Yogurt ranch dressing will keep in the refrigerator for a couple of weeks.  If you don't feel like making it, you can buy Bolthouse Ranch dressing from the produce section of the grocery store. I prefer it over a mayonnaise based sauce.

How to make buffalo chicken salad

Step 1: In a medium mixing bowl, combine the already cooked chicken and buffalo sauce. Toss to coat chicken. Set aside. Note: this chicken is amazing on it's own and could be used for a sandwich, in lettuce wraps, or chopped to make a buffalo chicken dip.

Step 2: In a salad bowl or large plate, begin building your salad. Add in your already chopped romaine lettuce, shredded carrot, cherry tomatoes, crumbled bleu cheese and thinly sliced onion. Next add your chicken tossed in buffalo sauce, top with greek yogurt ranch dressing. Serve and enjoy!

How do I pack my salad for lunch?

When it comes to meal prepping salads, especially this buffalo chicken salad, you need to remember just a few things.

  • Keep all of your wet ingredients operate from your dry ingredients.  This chicken in this recipe is wet from the buffalo sauce.  I would keep that in a separate container.  I would also keep the blue cheese in a separate container because it can potentially make your lettuce soggy.
  • Keep your dressings in a separate container from your vegetables so everything stays fresh.  All of the vegetables can be stored together.
  • You could also pack all of these ingredients into a wrap! The whole thing probably wouldn't fit, but you could put half in a wrap and then save the other half for a wrap the next day.

Tools to make this buffalo chicken salad

  • Lunch salad container:  This lunch salad container is perfect for keeping all of your components separate and fresh without having too use disposable containers.
  • Small cutting board and knife set: This set is perfect for cutting vegetables and fruit and is small so you could use it everyday without hassle.

Are buffalo chicken salads healthy?

I think they can be healthy depending on how many toppings you add to your salad. This buffalo chicken salad uses chicken breast, has one source of fat (blue cheese) instead of several, and the dressing is super light. It is also packed with veggies!

How do I make my own buffalo sauce?

Making your own buffalo sauce is actually quite easy and uses only a handful of few ingredients. This is for people who really like to control the ingredients in their food. I like this recipe for buffalo sauce.
