This buffalo chicken salad is no exception! We've got romaine, carrots, celery, tomatoes, and onion. Not to mention lot's of protein from the chicken, blue cheese crumbles, and the homemade Greek Yogurt ranch dressing! it is truly packed with flavor!

The thing I like about salads is it is really easy to make one serving, I just keep all of the components on hand and it is super quick to make. For this buffalo chicken salad recipe, I keep cooked chicken ready to go in my refrigerator and I always have romaine, tomatoes, blue cheese, and carrots chopped and ready to go. You are definitely going to want to keep my Greek Yogurt ranch dressing on hand at all times because it is only 24 calories per serving and so delicious!
Ingredients needed

4 ounces cooked skinless chicken breast, chopped - I like to keep roasted boneless skinless chicken breast in my refrigerator at all times that are just seasoned with just kosher salt and black pepper. I either use that or I have frozen already cooked chicken breast dices that you can find in the freezer section of most grocery stores. You could even use a rotisserie chicken to save time!
¼ cup buffalo sauce - you could make your own buffalo wing sauce using hot sauce and butter, but for simplicity, just buy it. I am not loyal to anyone brand. They all taste the same to me!
3 cups chopped or shredded romaine - You can buy heads of romaine lettuce for this buffalo chicken salad, or you can buy it already shredded in the grocery store.
¼ cup blue cheese crumbles - I am obsessed with blue cheese crumbles on salads and what pairs more perfectly with buffalo chicken?
⅓ cup halved cherry tomatoes - I always have some kind of tomato in my refrigerator so if you don't have cherry tomatoes, and diced tomato or grape tomatoes will be perfect.
1 small piece of red onion, thinly sliced
2 tablespoons chopped celery - I like to chop my celery at the beginning of the week and then just add it to my salads all week!
¼ cup shredded carrot - I buy my carrots already shredded because it just makes life so much easier!
¼ avocado, sliced
2 tablespoons Greek Yogurt homemade ranch dressing - My homemade Greek Yogurt ranch dressing will keep in the refrigerator for a couple of weeks. If you don't feel like making it, you can buy Bolthouse Ranch dressing from the produce section of the grocery store. I prefer it over a mayonnaise based sauce.

Step 1: In a medium mixing bowl, combine the already cooked chicken and buffalo sauce. Toss to coat chicken. Set aside. Note: this chicken is amazing on it's own and could be used for a sandwich, in lettuce wraps, or chopped to make a buffalo chicken dip.
Step 2: In a salad bowl or large plate, begin building your salad. Add in your already chopped romaine lettuce, shredded carrot, cherry tomatoes, crumbled bleu cheese and thinly sliced onion. Next add your chicken tossed in buffalo sauce, top with greek yogurt ranch dressing. Serve and enjoy!

- You could also pack all of these ingredients into a wrap! The whole thing probably wouldn't fit, but you could put half in a wrap and then save the other half for a wrap the next day.
