    Keto Teriyaki Chicken

    Another easy low carb dinner that can be made in under 30 minutes! This keto teriyaki chicken is full of flavor, will cure that keto Chinese food craving, and perfect served with cauliflower fried rice.

    Have you been craving keto Chinese food like crazy?  I know I have!  Did you know with a few simple substitutions, you can make this easy Keto Teriyaki Chicken in less than 30 minutes?  Let me show you how!

    KETO TERIYAKI SAUCE

    Of course, what makes teriyaki chicken is the sauce.  Store bought sauce is loaded with sugar and thickeners like corn starch.

    For our keto teriyaki sauce, we are using 6 simple ingredients: soy sauce, brown sugar substitute, garlic, ginger, water, and xanthan gum.

    After we brown the chicken, we pour this delicious sauce in the skillet and let it simmer with the chicken until it thickens and coats the chicken pieces.

    Now we just serve this Keto Teriyaki Chicken topped with green onions and with some cauliflower fried rice.

    Some other low carb 30 minute meals worth repeating are...Keto bang Bang Shrimp, Pan Seared Salmon and Avocado Salsa, Ground Beef Stroganoff, Quesadillas in the Oven, and Crack Slaw.

    Keto Teriyaki Chicken - 20 Minutes

    Ingredients

    • 2 Tablespoons avocado oil (Click here for my favorite brand on Amazon)
    • 2 ½ Pounds Chicken thighs cut into 1 inch pieces
    • ¼ Cup Soy Sauce or Coconut Aminos
    • 3 Tablespoons Keto Brown Sugar substitute
    • 1 Clove garlic, minced
    • 1 teaspoon Grated ginger
    • ½ Cup water
    • ¼ teaspoon xanthan gum (click here to see my favorite brand on Amazon)
    • Sesame seeds and sliced green onions for a garnish

    Instructions

    • Heat the avocado oil in a large skillet over medium-hi heat.  Add the chicken and sauté' until cooked through...about 8 minutes.
    • In a medium bowl, combine the soy sauce, sugar substitute, garlic, ginger, water, and xanthan gum.  Whisk to combine.  Pour the sauce into the skillet with the chicken and reduce the heat to medium.  Continue cooking for a few more minutes until the sauce thickens and coats the chicken.
    • Serve topped with sesame seeds and sliced green onions for garnish.

    Jennifer's tips

    • Serve with steamed cauliflower rice for a quick side dish.  I like to buy the already riced cauliflower in the frozen section of the grocery store.

      Hi! I’m really confused about it being 0 carbs...maybe you can help me with that. A 1/4 cup of sauce was 8 carbs and 3 tablespoons of stevia brown sugar was 36 carbs. I just ate the meal before checking and now I’m bummed I completely blew my carb max for the day.

        Do you mean Were brown sugar? It has zero net carbs. You subtract the sugar alcohols

      Great recipe! I used granular white Swerve because I didn’t have the brown one and it still tasted delish, I also added a little bit of sesame oil. The juice thickens as it cools down. I served ii over cauliflower fried rice... so yummy! Thank you!

      I just sauted my chicken and I have a lot of jucie or liquid from the chicken..I am doubling your recipe..do I drain the liquid or will it thicken with the sauce? HELP

        Xanthan gum- get it at a Natural Food Store. I buy it a the Natural Grocery in bulk. It is their brand. MAJORLY cheaper!

      Made this for dinner tonight and was VERY GOOD! My whole family loved it! Followed the recipe exactly but did add broccoli to the chicken and teriyaki sauce and served over cauliflower rice. This is a keeper!

      This was really good. However I don't understand how this is keto/low carb when the sugar substitute I used has 4 carbs per teaspoon and the recipe calls for 3 tablespoons. I mean that adds up.

        The carbs from sugar substitutes with sugar alcohols are not counted because they are not processed by the body.

          I don't see why not. It has no sugar but if you want an alternative you can use coconut aminos.

      For the cauliflower fried rice to accompany this dish, do you use your chicken cauliflower rice casserole recipe minus the chicken? Or do you have a separate recipe. Thank you for your great recipes!

        Yes, thats the recipe I would use without the chicken. If you want, you could make it like traditional fried rice instead of baking it in the oven
