What is hearts of palm pasta made from?
This vegetable pasta is made from the core of some palm trees. The harvesting of the hearts of palm does kill the tree and is typically not sustainable, that's why I am a big fan Palmini brand because they grow their own palm trees in a controlled environment.
What does hearts of palm pasta taste like?
I would compare it to an artichoke heart. It is very similar in taste and texture. The flavor is very mild and almost tastes like nothing, kind of like real pasta! It yields very well to rich sauces because the vegetable pasta is usually packed in citric acid. To get the best flavor, it is recommended to rinse the pasta for several minutes. This helps remove that citric acid.
Can you eat hearts of palm on keto?
Hearts of palm pasta is extremely keto friendly. In fact, a whole bag of Palmini pasta is only 6 net carbs and 60 calories!

Hearts of Palm Vegetable Pasta with Alfredo Sauce

Ingredients
- 22 ounces Hearts of palm noodles
- 1 cup heavy whipping cream
- ½ teaspoon garlic powder
- ½ teaspoon dried basil
- ½ teaspoon Kosher salt
- ½ teaspoon Freshly ground black pepper
- 1 teaspoon dried oregano
- 1 cup freshly grated parmesan
Instructions
- Prepare the hearts of palm pasta according to the package driections.
- Heat the heavy cream with the seasonings In a large skillet over medium heat. Stir in the parmesan and whisk continously until the cheese is fully melted. Toss in the palmini pasta to coat and let heat through. serve

Usually the package has directions for that. I would do it right before cooking them.

Thanks to Jennifer I just ordered the Hearts of Palm linguini. O A foods produces this brand and they suggest, besides rinsing the product with water, to also soak it in almond milk to get rid of the citric acid flavor that the product is packed in.
