Keto Coffee Cake Muffins

These keto coffee cake muffins are the perfect grab and go breakfast on those busy mornings or a perfect treat for anytime of day! Sugar free and a burst of cinnamon goodness in every bite!

I love making keto muffins!  They are so easy to make and they are even easier to eat.  These keto coffee cake muffins are the perfect addition to your breakfast routine.  I sometimes eat 2, or I accompany them with some eggs for a hearty breakfast.

Can I use sour cream in place of Greek Yogurt?

This is a common question when I post a recipe that contains my favorite baking ingredient, Greek Yogurt.  A lot of people think that Greek Yogurt cannot be included in a keto friendly diet.  I want to share with you that not only is Greek Yogurt much less calories than sour cream, it is less carbs!

1 cup of sour cream is 480 calories and 8g carbs.  1 cup of plain Greek Yogurt is 107 calories and 7g carbs.  This is why I love Greek Yogurt!

How to make the crumble for keto coffee cake muffins

This crumble recipe is very similar to the one I make for my pumpkin pie muffins.  We simply mix the crumble ingredients in a bowl until the resemble a crumble.  Then we sprinkle this on top of the muffins.  You want to be sure a distribute it evenly but no worries, if you run out, it is easy to re-distribute from one muffin to other muffins.

Ingredients

  • 2 ½ Cups almond flour (click here to see my favorite on Amazon)
  • 1 teaspoon Baking soda
  • ¼ teaspoon Kosher salt
  • ½ cup Granular Sweetener (Click here to see my favorite on Amazon)
  • 3 Large eggs, beaten
  • 8 ounces Plain Greek Yogurt
  • 2 teapoons Vanilla Extract
  • 1 teaspoon cinnamon

Topping:

  • ⅓ Cup almond flour (click here to see my favorite on Amazon)
  • 2 Tablespoons Granular Sweetener (Click here to see my favorite on Amazon)
  • ¼ teaspoon cinnamon
  • 2 Tablespoons Melted Butter

Instructions

  • Preheat the oven to 350F and line a 12 cup muffin pan with liners. Spray the inside of the liners with cooking spray. In a large mixing bowl, combine the almond flour, baking soda, salt, sweetener and cinnamon. Now add in the beaten eggs, greek yogurt and vanilla extract. Mix until well combined.
  • Scoop the batter into the muffin cups evenly using a large scoop. In a small bowl combine the ingredients for the topping . Top each coffee cake muffin evenly with topping.
  • Bake in oven for 25 minutes or until toothpick comes out clean. Serve.

      Yes, then bake for 30-45 minutes or until a toothpick comes out clean.

    I tried to make this today. The “batter” was soooo dry! Like drier than the crumbles! What did I change that made it that way?? I only made two substitutions: I used coconut flour/almond flour mix
    I used light sour cream
    Help!!!

      It's the coconut flour. Coconut flour is not a 1 for 1 swap

      I used 1/2 cup coconut flour & 2 cups almond flour (subbing coconut flour for 1/5 of the flour) and it worked for me. I did add extra liquid in the form of unsweetened apple sauce and apple juice concentrate.

      Thank you! Coffee cake is called that because it is traditionally served with coffee.

    Does it matter whether we use Fat Free or Full Fat Greek Yogurt? Your other muffin recipes call for fat free so just double checking. Thanks for all the great recipes (sweet and savory!) and best of luck with your long-awaited cookbook!
