Are strawberries keto friendly?

Thanks! The Keto Strawberry Quick Bread is a tasty recipe. The longest part is the 40 minutes in the oven. My bread looks just like the picture. I'm going to try the recipe with blueberries next. Thanks!!!
Sonya says
Have you made this using coconut flour? If so, what is the conversion rate? I have issues with almond flour and so many keto recipes call for almond flour.
Thanks in advance!
Jennifer Banz says
You would use 1/4th the amount of coconut flour and I typically add an extra egg.

Was very anxious to make this quick read. Put it in oven for about 45 minutes until toothpick came out clean. It looked lovely. Waited about 15 minutes to cool then turned it upside down on serving dish and it didn’t come out. Turned it back up and some of the top fell off. It was very soggy on the inside. So I put it backed in oven for 10 more minutes. Because some of the top came off I could see the middle. Still soggy Back in oven for 7 more minutes. Still soggy. Gave up. Tasted it. It resembled a pudding but very good. I’m an experienced baker so I’m quite sure if someone is following your recipe the exact same thing would happen. You really need to test this recipe before sharing it with others.
Jennifer Banz says
I am having a hard time understanding how the middle "resembled a pudding" but a toothpick came out clean. Nevertheless, I have tested all of my quick breads numerous times, and make videos doing so.
Andrea says
I made and it came out wonderful, I didn't change anything. The color was a little different, a little brown but I believe it was because of the swerve brown sugar o used that gave that color. Very good bread.

We loved it! Really nice consistency! Had to bake a lot longer in my oven, but that's fine, no two ovens are alike (and mine is not great). Off to browse more recipes!
Thank you!

Do you think rhubarb could be subbed in place of the berries? Doing your yesterdays recipe today for dinner. Thank you for all you do.

Loved this bread! So easy even I could make it! Making another on a few minutes, with blueberries this time!

I don't know what's going on. This is the second one of your quick bread recipes I've tried that did not work out. Both recipes have collapsed in the center. And this one is impossible to pick up. After the bread cooled I took it out of the pan, cut a piece, which fell apart, and then tried to pick it up to put it in a storage bag to put away. The whole loaf fell apart, into 5 or 6 pieces. I followed the recipe to the letter. I'm really disappointed in these recipes. They taste great, but completely fall apart.
jenniferbanz says
Sounds like they needed to cook longer. All ovens vary and can provide mixed results.

I made this yesterday and it is absolutely delicious!
It is a little crumbly, do you think I may have over cooked it? It was a little wet on my test stick so I put it back in for a few minutes. Love your recipes! Thank you
Sherry says
I just made this and it is wonderful and incredibly easy! I think the recipe would be great without it but I added a teaspoon of almond extract and I feel like that really made this amazing!

Hi Jennifer... Just had to let you know that I had to go to YouTube to watch your video because the video on this page had so many 20 second ads without a "skip ads" button that I found it not doable. I have been a big fan of yours for a long time and love your recipes.
jenniferbanz says
Thank you for letting me know! I will see if I can change the frequency.

I did a no-no. I had a banana that was really ripe and made this quick bread using it.
It was delicious. It probably added 3 carbs per slice. This recipe was rich and tasty and the texture was great.I will use it for many quick breads. The only change was it took less time in the oven, about 35 minutes, and I added Lily’s unsweetened chocolate chips…about a quarter of a cup. Can’t wait to try this recipe with blueberries, mangoes and whatever. Thank you!!
Alisa says
This is lovely and was easy to bake in the air fryer also. Thank you
