    A super easy and decadent 4 ingredient keto cheesecake fluff that is layered with any topping your heart desires!  I give 5 topping options and 4 mix in options for different flavors.

    I am so excited about this new yummy treat that I have for you today!  This Keto Cheesecake Fluff will knock your socks off because it is so good.  If my husband thinks it's amazing, then we have something really good on our hands!

    I love love love cheesecake and I love the simplicity of this sugar free cheesecake fluff.

    When I am looking for something a little more show stopping...I make my decadent keto cheesecake.  It is out of this world!

    HOW TO MAKE KETO CHEESECAKE FLUFF

    For this recipe, I used heavy cream, softened cream cheese, lemon zest, and low carb sweetener.

    I used my stand mixer to get the heavy cream whipped to stiff peaks.  Then, I scraped it into a separate bowl and set it aside.  You could also whip this by hand with a whisk or use a hand mixer.

    I then beat the softened cream cheese, lemon zest, and the sweetener until it was nice and smooth.

    It is important to start with soft cream cheese.  If it isn't soft enough, your cheesecake fluff will be lumpy.

    I poured the whipped cream into the stand mixer bowl with the cream cheese and I gently folded it with a spatula to get it half way incorporated.  Then used the stand mixer with the whisk and I beat the mixture until it was completely smooth.  Now we have keto cheesecake fluff!

    I scraped it all into a piping bag to get it into the glasses nice and pretty.  This is totally optional, but it does make it nice if you were serving the keto fluff to guests.

    KETO CHEESECAKE FLUFF TOPPINGS

    • For the crumble of this low carb cheesecake mousse, I used the Atkins Lemon Bar!  I chopped it up into chunks and it was the perfect addition to this recipe.
    • My Keto Granola would be equally amazing as a topping for this dessert.
    • Toasted coconut
    • chopped strawberries or raspberries
    • chocolate chips

    I chopped up my crumble and I put some into the bottom of the glasses, followed by keto no bake cheesecake, then more crumble, cheesecake fluff, and finally, the crumble on top.

    Keto Cheesecake Fluff - 4 Ingredients!

    Ingredients

    • 1 Cup Heavy Whipping Cream
    • 1 8 ounce Brick of Cream Cheese, Softened
    • Zest of 1 Lemon
    • ½ Cup sugar free granulated sweetener (see my favorite on Amazon)

    Instructions

    Make the Fluff

    • Add the heavy cream to a stand mixer and whisk until stiff peaks are formed. You can also use a hand mixer or whip by hand with a whisk.
    • Remove the whipped cream to a separate bowl and set aside
    • Add the softened cream cheese, zest, and sweetener to the stand mixer bowl and beat until smooth.
    • Pour the whipped cream into the stand mixer bowl with the cream cheese.  Stir gently with a spatula until it is halfway incorporated.  Use the stand mixer to finish whipping until smooth.
    • Serve with your favorite topping. See notes below for flavor mix-ins.

    Notes

    • NUTRITION: Listed nutrition is for just the no bake cheesecake mousse.
    • SWEETENER: This recipe works with either powdered Swerve or Powdered Lakanto sweetener.  
    • TOPPINGS: My favorite is my keto granola
      • toasted coconut
      • chopped berries
      • chocolate chips
    • SOFTENED CREAM CHEESE: Make sure your cream cheese is really soft or your mousse will be lumpy.
    • OPTIONAL MIX-INS: 
      • If you prefer, you could make this a vanilla mousse by eliminating the lemon zest and adding 1 teaspoon of vanilla extract.
      • replace the lemon zest with PB2 for a peanut butter fluff
      • replace the lemon zest with 1 teaspoon of cocoa powder for a chocolate keto fluff
    • STORING: This will keep in the refrigerator in an air tight container for up to a week.

      This recipe is so simple and yet so delicious! I did not use granulated sweetener…. I used powdered swerve. Just the cheesecake fluff by itself is fabulous… I made it with the lemon zest and I’m so glad I did! After mixing it all up I divided into six equal portions of 90 g each. Perfect little dessert treat!

      I've added a packet of flavored sugar-free gelatin on several occasions and it's divine!
      I use allulose sweetener instead of erythritol and reduce the amount to 1/4 cup when using gelatin.

      I’m going to make this one this coming weekend for sure. I’m thinking that the granulated sweetener is coming out grainy because they aren’t mixing it long enough? The tip says you can use powdered, but I’m guessing that’s there only for those that don’t have a granulated version of the sweetener? Anyways, it looks divine and I can’t wait to try it!!!

      Just started keto and watching my family eat cookies tonight made me search for a yummy desert. Wow did this hit the spot! I ate mine with berries and chopped pecans. I was surprised how sweet it is. Didn’t take much to satisfy my sweet craving. Can’t wait to try it with the vanilla and cocoa variation.

          I would make one whole recipe and then measure it by the tablespoon to see how many tablespoons it makes. That would be how many servings the recipe would make for you.

      I made this cheesecake fluff several times. I put it on the almond flour pie crust. It was great! I made it for get-togethers and found it much easier to transport and serve on the crust. I spread one batch of the crust in a rectangular pan. I baked the crust for approximately 20 minutes for a crisper, cookie-like crust. I qlso made two batches of the fluff, one vanilla and one chocolate, so every had a choice. Both fit on the crust. Everyone loved it!

      This recipe says it has 4 net carbs, but I punched it into a nutrition calculator, and it has about 34 carbs, no fiber or anything to reduce the net carbs. It really threw off my diet! I should have known it was too good to be low carb.

        The nutrition calculator you are using likely included the erythritol sugar alcohols. Those should not be counted.

      Wow, wow ,wow ,thank you sooo much for all of your sweet recipe,s, I made the cheese cake bottom from the strawberry one and did the no bake lemon fluff .
      Layered it in a glass with a bit of the lemon and soft cheese mix ,as well as the fluff and called it lemon fool wow layers of joy thank you so much even made enough for my mom to try as she's diabetic ☺️ no more missing lemon curd

      Don’t forget you can use a coffee grinder to powder those sweeteners down to a powder. That’s what I do for my monk fruit.

      Is delicious... however, the granular monk fruit you linked in the ingredients as your favorite makes it very grainy. I wish I would have noticed your tips that say to use powdered sweetener.

      I love mousse because it's so much lighter than cheesecake. It's perfect to finish with when having guests for dinner. And lemon is one of my favorite flavors. This looks amazing and now you've got me curious about the Atkins bars so I'll have to go buy some for myself.
