    Savory Bacon Wrapped Carrots Recipe

    Sweet carrots wrapped in slices of salty bacon are a match made in heaven. These bacon wrapped carrots are a simple side dish that will excite your taste buds!

    Bacon Wrapped Carrots

    I am a Hugh fan of anything wrapped in bacon. This is evident by all of the recipes I have like Bacon Wrapped Chicken Thighs, Pork Loin, Chicken Tenders, Bacon Wrapped Asparagus, and even Hot Dogs!

    I think this may be my favorite bacon wrapped recipe yet. You may be surprised to learn that I am not a fan of carrots. In fact, I have had a hatred for carrots my entire life. This carrot side dish is the exception, though. I took one bite of a bacon wrapped carrot and I literally said "Oh wow!" The flavor really is exceptional.

    The savory seasonings on the sweet tender carrots along with the saltiness of the bacon was like a party in my mouth! It really is a perfect combination and the perfect side dish for the whole family. Even my picky husband ate them up!

    How to make bacon wrapped carrots

    1. Prep the carrots: On a cutting board and with a sharp knife, peel the carrots and remove the stems.

    1. Season the carrots: For easier cleanup, I like to add the carrots and the seasoning together in a large zip-top bag. You can also toss the carrots with the seasonings in a large bowl with some tongs or your clean hands.

    1. Wrap the carrots with bacon: Starting at the thickest end, wrap each carrot with a piece of bacon, being careful not to let the bacon overlap. Place them on the wire rack in a single layer.

    1. Roast: These bacon wrapped carrots will bake in the oven for 20-30 minutes or until the bacon is crisp and the the carrots are tender.

    Tips

    1. Carrots: Choose carrots that are not too thin or too thick. Thin carrots will get mushy before the bacon gets crispy, and thick carrots will not cook through before the bacon burns. I give some additional tips in the recipe card below.
    2. Cleanup: This is a recipe you are going to want to make often, so let me give you some tips to make it as easy as possible. Line your sheet pan with foil before adding the wire rack for easier cleanup. Also, mix the carrots with the seasonings in a large zip-top bag.
    3. Re-heating: bacon typically gets flaccid after reheating in the microwave. You can reheat these in the air fryer for a few minutes to crisp the bacon back up. If you do not have an air fryer, you can reheat them in a large skillet over medium heat.

    Ingredients

    • 8 medium carrots, see notes
    • 8 slices bacon, see notes
    • ½ teaspoon garlic powder
    • ½ teaspoon dried oregano
    • ½ teaspoon dried basil
    • ½ teaspoon dried parsley
    • ½ teaspoon salt
    • ¼ teaspoon black pepper

    Equipment

    • large sheet pan with a wire rack

    Instructions

    • Preheat the oven to 375F and set aside a sheet pan with a rack. If you like, you can line the sheet pan with foil for easier cleanup.
    • Cut the stem off and peel each carrot.
    • Add the prepped carrots to a large zip-top bag along with all of the seasonings. seal the bag. Shake the carrots around in the bag until evenly coated with the seasonings. Alternatively you can use a large bowl and mix with tongs.
    • Remove a carrot from the bag and grab a piece of bacon. Starting at the thicker end, twist the bacon around the carrot until you reach the tip. Try not to let the bacon overlap while twisting. Place the bacon wrapped carrot on the large baking sheet with rack, in a single layer. Continue with the remains carrots.
    • Bake in the preheated oven for 30 minutes, flipping halfway through, until the bacon is crispy and the thickest part of the carrots are fork tender. Cooking time will depend on the thickness of your bacon and the thickness of your carrots. If you notice the bacon getting crispy but the carrots are not tender, loosely cover the tray with foil and continue cooking until the carrots are cooked through.

    Notes

    • Carrot size: You want to pick medium sized carrots for this recipe.  Thicker carrots will not cook through before the bacon starts to burn.  Alternatively, if you have larger carrots, you can use thicker slices of bacon.  Thin carrots will get mushy before the bacon cooks through.
    • Bacon size: I used regular bacon for this recipe.  Thicker bacon would work, they would just need additional cooking time and you may want to use thicker carrots, like 2 inches in diameter at the thickest point.

      I might also, after wrapping, cover them with "fake" brown sugar. Would make an amazing combo with the bacon and the other spices.

      Is this 6 carbs per 1 carrot? I see that the recipe is for 8 carrots but is the serving size 1 carrot? Thanks for this recipe.
