2 tablespoons avocado oil - you can use whatever oil you like. Olive oil with work!
3 pound boneless pork loin (cut into 6 chops) - if you cannot find a pork loin this small, you can buy a larger one and save the extra in the freezer for another recipe like my crockpot pork loin pulled pork.
salt and pepper to taste
1 teaspoon garlic powder
4 tablespoons butter, melted
Chopped parsley for garnish
How to make your own thick keto pork chops:
Instead of buying thin boneless pork chops that are already cut, I like to cut my own and I cut them at least 1.5 inches thick. I do this for a couple of reasons. 1. They are less likely to over cook and dry out and I want juicy pork chops and 2. thick pork chops are just better and easier to cook. I buy a 3 pound pork loin and I cut it into 6 even chops by cutting it in half, then each half is cut into thirds. If you cannot find a 3 pound pork loin (this is on the smaller side) you can buy a larger one and freeze the extra for another meal.

Heat the avocado oil in a large heavy bottomed skillet over medium-high heat. Season each side of your boneless pork chops with salt, pepper and garlic powder.
Cook the low carb pork chops in the hot pan to get a good sear - about 2 minutes on each side. Reduce the heat to medium and continue to cook until the internal temperature reaches 145F, about 10 minutes.
When the keto pork chops are cooked through, drizzle melted butter over top. Finish the dish with chopped parsley, if desired.

- One of the most important kitchen tools in my kitchen is a probe meat thermometer. There is no shame in using one to make sure your boneless pork chops are perfectly cooked! I insert the probe into the center of the pork chop, being sure to not go all of the way through. Pork is safe to eat at 145F and in my opinion, that is when it is the juiciest.

This came out so yummy! I just started the keto diet so I am learning new dishes and this is one of the best ones I have made/tasted!
