    14 Delicious Keto Recipes using Cauliflower

    Cauliflower is one of the most versatile keto ingredients. It makes a delicious mash, rice, or risotto. It is amazing roasted with different seasonings and proteins. It's also great in smoothies! Serve any of these keto cauliflower recipes any day of the week.

    Keto Cauliflower recipes are tricky because cauliflower can tend to be watery.  After all of my years of cooking with cauliflower, I have perfected the art of cooking with cauliflower and my resulting dish not be a bowl of soup!

    My trick?  I never ever boil my cauliflower.  This is a recipe for any keto cauliflower recipe to be water logged.

    My preferred method?  Steaming or using the Instant pot.

    I also love buying the frozen steam bags at the grocery store.  Don't judge me!  Cutting a head of cauliflower is not my favorite kitchen job so I chose to leave that up to the grocery store.

    MY FAVORITE KETO CAULIFLOWER RECIPES

    Loaded Cauliflower Rice Casserole: This recipe uses cauliflower rice.  I used 2 bags of frozen cauliflower rice.  As you can see, the casserole is not watery at all!

    Curry Roasted Chicken Thighs with Butternut Squash and Cauliflower:  This recipe uses a fresh head of cauliflower.  I cut them into large florets and seasoned them with curry powder.  This keto cauliflower recipe has so much flavor and is out of this world!

    Cilantro Lime Pesto Cauliflower Rice:  This recipe packs the cauliflower rice with delicious flavors of cilantro and lime.  It is a perfect side dish for your Mexican fiesta!

    Roasted Cauliflower Cobb Salad:  This delicious keto cauliflower recipe uses a whole head of cauliflower that is roasted in the oven.  I don't know about you, but I would much prefer roasted cauliflower as opposed to lettuce in my Cobb Salad!

    Cauliflower Fried Rice with Shrimp:  Another cauliflower rice recipe that is jammed packed with flavor!  Shrimp fried rice with bacon...so good and ready in 20 minutes!

    The Cheesiest Cauliflower Mac and Cheese:  My trick for the cheesiest cauliflower Mac and cheese?  Cut the cauliflower florets as small as possible so the cheese sauce gets in every nook and cranny.

    Instant Pot Mashed Cauliflower:  This, my friends, is going to be the smoothest mashed cauliflower you have ever eaten.  The trick is the Instant Pot!  The Instant Pot steams the cauliflower super soft.

    Keto Shrimp and Grits: Pulse cauliflower rice until it resembles grits, then mix it with delicious cream, butter, and cheese.  Top with bacon and shrimp for an amazing low carb cauliflower recipe anyone would love!

    Microwave Cauliflower Rice:  This is a diy microwave cauliflower rice.  I even give tips for making this in bulk and freezing for later!

    Cauliflower Stuffing with Chicken Thighs: This roasted cauliflower recipe for your Thanksgiving table is a full meal!  Full of crunchy croutons, chicken thighs, and roasted cauliflower....and topped with crispy chicken skin, say what?

    Garlic Butter Shrimp and Cauliflower Rice: This is one of the first recipes I created here at Low Carb with Jennifer.  Everything is cooked on a sheet pan and that means easy cleanup.

    Ingredients

    • 1 Large Head Cauliflower
    • Kosher salt and pepper to taste
    • 1 Cup Water

    Equipment

    • Steamer basket

    Method

    The basics of steaming a head of cauliflower
    1. Cut the cauliflower into florets. You can make them any size you want depending on what you are going to use them for. I prefer small florets so they are easier to eat.
    2. Season the florets generously with salt and pepper.
    3. Heat the water in a medium size saucepot over medium heat with a thight fitting lid. Add in the steamer basket and place the cauliflower florets in the steamer basket. Lower the heat to low and let the cauliflower steam until the florets are tender. About 25 minutes.
    4. Remove the cauliflower from the steamer basket and serve with cheese sauce or mash with butter and heavy cream for mashed cauliflower.
