grilled cheese made with keto bread

90 second keto bread

Making your own easy 90-second keto bread can be super simple when you utilize your microwave and a few staple keto ingredients.  I love that this keto recipe is a gluten-free friendly bread recipe, dairy free, and perfect for a keto lifestyle.  It’s such a game changer at only 2.7 grams of net carbs!

I like to top my 90 second keto toast with keto strawberry jam, slice it and make a grilled cheese and serve with keto tomato soup, use it as a hamburger buns, or just a plain old sandwich.  It’s also perfect for avocado toast!

I love this low carb bread recipe because it doesn’t use any ingredients like psyllium husk powder, xanthan gum, cream cheese, or apple cider vinegar.  You also don’t need a hand mixer, food processor, or loaf pan. If you miss regular bread, this recipe is for you! It really is the best keto bread recipe!

Almond flour bread

This is my favorite version of this low-carb bread recipe because I prefer the taste of almond flour over coconut flour. For this version you will need:

  • 3 Tablespoons of Almond Flour
  • 1 Tablespoon butter, melted or oil ( can use coconut oil, olive oil, or ghee)
  • 1/2 teaspoon Baking powder
  • 1 large egg, beaten (use just the egg white for a less “eggy” taste)
  • Pinch of salt (skip if your butter is salted)

Nutrition for 1 serving using almond flour: 315 calories / 29g fat / 5g carbs / 2g fiber / 11g protein

Coconut flour bread

This version of microwave keto bread is perfect for people with almond or nut allergies.  Coconut flour is more absorbent than almond flour…that’s why this recipe requires less.

  • 1 1/3 Tablespoon Coconut Flour
  • 1 Tablespoon oil or melted butter
  • 1/2 teaspoon baking powder
  • 1 Large egg, beaten (use just the egg white for a less “eggy” taste)
  • Pinch of salt (skip if your butter is salted)

Nutrition for 1 serving using coconut flour: 235 calories / 20g fat / 5.7 carbs / 3g fiber / 8g protein

keto bread ingredients

90 second keto microwave bread instructions

For the microwave, I like to use a round ramekin (like this one) that is 4 inches in diameter or a 4 inch x 4 inch microwave safe container.  Add the melted butter or the coconut oil to the container and swirl it around.  Next, add all of the rest of the ingredients and whisk with a fork.  The dough will be very wet.  Tap on the counter a few times to remove air bubbles.  Microwave on high for 60-90 seconds.  Remove from the microwave and let cool.

When it’s finished cooling, you can slice it in half lengthwise to make 2 slices of keto-friendly bread.

Oven instructions

Disclaimer: I do not recommend the oven as the bread does not rise nearly as well so it is more dense. For the oven, you need to use an oven safe container.  A ceramic ramekin that is 4 inches in diameter (like this one) is perfect.  Pour the oil or melted butter in the ramekin and swirl to coat the inside.  Add the rest of the ingredients to the ramekin and mix well with a fork. Tap on the counter a few times to remove air bubbles.  Cook in the oven at 375F for 10 minutes or until the center springs back when touched or a toothpick comes out clean.

How to make this non-eggy

Some people have a problem with the “eggy” taste of this easy keto bread recipe.  This is from the egg yolks that are used.  To remedy this, you can use just an egg white and save the egg yolk for another recipe.  You can also use carton egg whites from the grocery store.  For that you would need to use 2 tablespoons of the egg whites.

This would also result in a bread with less fat and calories and a taste and texture similar to white bread.  The nutrition would be:

Almond flour: 265 calories / 25g fat / 5g carbs / 2g fiber / 8g protein

Coconut flour: 177 calories / 15g fat / 6g carbs / 3g fiber / 5g protein

As you can see, making this with coconut flour and an egg white really cuts down on the calories so you can really stuff this will really good sandwich stuff like bacon and avocado!

keto bread grilled cheese

different ways to use 90-second bread

  • Add some fresh or dried herbs, garlic powder, and parmesan cheese for a quick garlic bread or Italian bread
  • Add cinnamon and sugar free sweetener for a sweet treat, like French toast!
  • Top with everything but the bagel seasoning and an egg for an easy breakfast!
  • Make several and freeze for later.  Simply wrap the cooled 90 second bread in plastic wrap and place in a freezer safe container or bag.
  • Make a peanut butter and jelly sandwich
  • Toast in a toaster oven until golden brown and top with a little butter and your favorite toppings
  • Make a keto breakfast sandwich (my favorite way)

  • Add the oil to the bowl or ramekin and swirl around to coat. Add the rest of the ingredients and stir stir well. Tap on the counter a few times to remove air bubbles and microwave for 60-90 seconds.  You can also bake in a oven safe container for 10 minutes at 375F
  • You can make this 90 second keto bread less eggy by using just an egg white as the egg yolk is where the eggy taste comes from.

Notes

For1 serving using almond flour: 315 calories / 29g fat / 4.7g carbs / 2g fiber / 11g protein
For 1 serving using coconut flour: 235 calories / 20g fat / 5.7 carbs / 3g fiber / 8g protein
For 1 serving using almond flour and an egg white: 265 calories / 25g fat / 5g carbs / 2g fiber / 8g protein
  • Nut free version: if you are intolerant to almond flour you can use sunflower seed flour as a 1 for 1 swap with the almond flour.
  • To make this less eggy tasting, use just an egg white as the egg yolk is where the eggy taste comes from.
  • Tap the container on the counter a few times to remove any air bubbles before you cook it
  • You could really use any nut flour that you want if you are allergic to almonds or coconut.  For alternative nut flours like pecan four, you would use 3 tbsp.  You use half the amount for coconut flour because it’s not really a nut and it is very absorbent!
  • I found that a 4×4 microwave safe container made the perfect size piece of low carb bread that could be cut in half and use as a sandwich
  • You could also use a round container that is 4 inches in diameter for a keto mug bread
  • If you would rather bake this in the oven, you can use an oven safe container and bake at 375 for 10 minutes
  • Toasting this 90 second keto bread makes it have a much better texture.  you could also use a skillet to toast it in some butter.  Yum!

I so wanted this to be as good as the reviews are saying but I struglled after multiple attempts. Was making hamburgers on the grill and wanted this for a bun. So I first used a Campbell soup mug with the almond flour recipe. It seemed to rise a lot but I discovered it wasn’t the 4″ in diameter. It did seem eggy, so I picked up egg whites from the store and used 2 tablespoons as stated. I also switched to a 4″ ramikan which would be a better size for my hamburger bun. Every attempt ended in a lot of banging to remove air bubbles but I saw none but cooked product showed they were there on the bottom. Anyway, the egg whites did not rise. Both attempts were flat so I went back to the whole egg. Put in toaster oven but that just made them dry. I will try browning in pan on stove next time. But any help with air bubbles or why egg whites didn’t rise would be appreciated.

  2. I doubled the recipe, did a two to one almond to coconut flour. One whole egg and one egg white. It was SOOOO good. I made fancy tea sandwiches topped with various cooked veggies and bacon with a teaspoon of pesto. My guy loved them, too. So easy. Thank you!

It was really good, thank you for the recipe. I used 2tbsp +1.5 tsp almond flour plus 1.5 tsp coconut flour. My container was about 5.5×5.5 so it came out thinner than written, but was perfect for breakfast with homemade keto strawberry jam/puree.
    Thank you!!

Excellent bread – the most like white bread since discovering keto years ago! Cut very thin – and toast! Wow! Thank you!

  5. So delicious. I made them. 2 times so far!
Thank you for sharing all your recipes. They are all so easy and amazing!!

I had read about the 90 second keto bread and was skeptical but decised to give this recipe a try. It was better than expected. I used almond flour and egg whites, not eggy at all. I used a 4” ramekin and microwaves. Texture was a bit dry, especially after toasting, but it worked great for a sabdwich. This is definitely an option for a busy morning.

    Thanks for posting!

I am new to Keto – three weeks in and missed bread. I know I should limit making this but have made it 3 different ways three times this week. I liked the Almond flower best and used ghee in place of butter. Very rich and filling. I’m looking forward to trying the combo with avacado oil – it has less calories and carbs. Likely the one I SHOULD go far. Thank you for the fabulous treat.

My microwave broke so I used the instructions for baking in the oven. The bread stuck in the ramekin. Next time I will mix it up in a bowl, spray the ramekin with cooking spray, then pour the mixture into the ramekin. The bread tasted great however.

  9. I’m wondering if I can put this “batter” in a buttered waffle iron and cook it that way?
Seems like it would work fine.

I made this recipe using butter and an extra T of Almond flour because my egg was extra large plus I wanted to add 1/2 tsp cinnamon and 1/2 monk fruit to try and replicate a Keto Cinnamon bread I use to buy. I had a square dish that was perfect bread slice size. I got two slices out of it, toasted one and put a thin layer of peanut butter on it. It was awesome!!!

  11. Your coconut flour and egg white version was my first attempt at any type of gluten-free bread after reviewing countless other recipes. Only needed 60 seconds in my microwave, then I skillet toasted and ate it with a slice of cheese. First time I’ve had bread in almost a year and I can’t thank you enough!

    1. Made this with coconut flour & an egg white. It was more a dough than a batter and made a very thin piece of bread. I made it into half a grilled cheese sandwich. It was pretty satisfying.

This turned out amazing! I made sausage bacon egg cheddar cheese “English muffin” sandwiches! I used my homemade almond meal that I keep slightly crunchy. Then pan seared the slices to to get them toasty. I can’t wait to see what else I can do with this! I am doing the keto diet with my roommates and they are in heaven! I wish I could post a pic!

  13. I love this keto bread recipe! I use the 4 inch ramekin and liquid egg whites. I had to adjust the time in the microwave to 60 seconds as my microwave it a 1200 watt beast 🙂

Made this out of desperation so I didn’t have to eat a plain hamburger without a bun. I used one of those big soup mugs and it made a perfect bun for slicing in half and toasting in the toaster. It stood up to the last bite and my brain said that it was not exactly bread but it was satisfyingly hamburger bun. Thanks a million for the recipe 🙂

  15. Sorry if this has been asked and I missed It! Any idea of how to make a full loaf size? (Asking mostly for the coconut flour recipe)

I have been making this for almost 6 months ish . My recipe for this yummy bread is…,instead almond flour or coconut flour only I combine them because coconut by itself is too dry and almond stays soggy instead of using half almond and half coconut I use 2Tbs almond and 1Tbs of coconut it mixes well it adds a baby powder texture which is something I have to have in my bread, soft bread is a must. I don’t use butter I only use extra extra virgin oil ( have been thinking about experimenting with other oils to see what I can come out with) and of course I use egg whites most of the time which doesn’t make it as heavy or an eggy taste. I use egg whites when it’s hot outside and I want a lighter sandwich with veggies I use whole egg when I want a heavier textured bread like when it’s cold outside and a bowl of vegetable beef or herbed tomato Soup with a Havarti / Gruyere grilled cheese Freaking Amazing & Yummy ? during breakfast I use egg whites with spices like maybe vanilla extract a little cinnamon after the microwave throw it in a little oil in the pan fry for a minute or less just to get that crunchy texture add salted butter on top and enjoy !! My point is this is one the best recipes I’ve come across because I was missing bread and I hadn’t realized just how much this bread is so easy and versatile you can change to your liking it’s easy to alter for different meals breakfast, lunch, dinner & dessert. I’m so thankful for this recipe and to top it off it hasn’t ruined my ketone levels This microwave bread recipe was a life saver for me and it’s been so fun coming up with add ons for it! Thanks so much & I hope my story (sorry it’s so long )Lol !! has helped someone out there who is struggling & missing bread this is you Holy Grail take care , wear a mask , and stay safe !!!

You should try it and find out and let us know that’s how I started when I first started using this recipe since I’ve made my own recipe I’ll tell what I did every recipe I tried I inputted they items into my fitness app I’m using ( so many out there that count calories macros net carb you name it they count it) and I kept track with new recipes like that until I came up with one with 2 carbs abc I use religiously now because I missed bread terribly and I didn’t realize how much from grilled cheeses to my bread pudding and just a muffin with my breakfast so I came up with recipes that satisfied that craving for that meal and I stayed within my carbs per day I even went lower than I had been but my point : just go ahead and experiment it only takes 90 seconds and have fun doing it when you get one that you really like Share ! lol ? I hope this helped you ! Take care out there !

Hi! Love this recipe but I was wondering if you had any hints to cut down calories. Will it rise without the egg yoke?

  26. 5 stars
Wow! So surprised as how good this is! Had it for breakfast with a homemade keto strawberry preserve and ghee. I used ghee in the recipe as well instead of just butter or oil. I have missed bread so much but not anymore! Thank you! ?
