    This 90 second keto bread is one of the easiest ways to make a quick low carb bread at home using simple pantry ingredients and a microwave. It’s soft, sturdy enough for sandwiches, and ready in just a few minutes.

    I especially love this bread toasted. Toasting gives it a much better texture and makes it perfect for grilled cheese sandwiches, breakfast sandwiches, avocado toast, burgers, or even pulled pork sandwiches.

    You can make this keto bread with either almond flour or coconut flour, and you don’t need yeast, kneading, or any special equipment. It’s one of those simple low carb recipes that becomes really useful when you need bread fast.

    What This Bread Is Like

    This 90 second keto bread is soft, sturdy, and best when toasted. The texture is somewhere between sandwich bread and an English muffin, and it holds up really well for grilled cheese, breakfast sandwiches, burgers, and toast.

    Because this bread is made in the microwave, it won’t have the exact texture of bakery bread, but toasting it completely changes the texture and flavor. I almost always toast mine before serving.

    One of the things I love most about this recipe is how practical it is. You can make a single serving in just a few minutes without turning on the oven or making an entire loaf of bread.

    Ingredients You’ll Need

    This 90 second keto bread is made with a few simple ingredients that you may already have in your kitchen. I usually make the almond flour version because I like the flavor and texture best, but I’ve included a coconut flour option as well.

    Almond Flour Version

    • Almond flour
    • Avocado oil, melted butter, or coconut oil
    • Baking powder
    • Egg
    • Pinch of salt

    Coconut Flour Version

    • Coconut flour
    • Avocado oil, melted butter, or coconut oil

    If you prefer a less eggy flavor, you can use only the egg white instead of the whole egg. I also highly recommend toasting the bread after cooking because it gives the best texture.

    How To Make It

    Add the oil or melted butter to a 4-inch ramekin or microwave-safe container and swirl it around to coat the bottom and sides. This helps prevent sticking and makes the bread easier to remove after cooking.

    Add the remaining ingredients directly to the ramekin and mix with a fork until smooth. The batter will look thin at first, but that’s normal. Tap the ramekin on the counter a few times to remove any air bubbles.

    Microwave on high for 60 to 90 seconds, or until the top looks set. Let the bread cool for a minute or two before removing it from the ramekin and slicing.

    For the best texture, slice the bread in half and toast it before serving. Toasting gives the bread golden edges and makes it much more bread-like for sandwiches, grilled cheese, burgers, or toast.

    I also love using this bread for sandwiches with my crockpot pulled pork recipe and coleslaw because it holds up surprisingly well once toasted.

    If you want something simple, toast it with butter or my keto sugar free strawberry jam for an easy snack. You can even make a sweeter version by adding a little cinnamon and sweetener to the batter before cooking.

    Storage Instructions

    This 90 second keto bread is best fresh, especially after toasting, but you can store leftovers for later if needed.

    Wrap the bread tightly or store it in an airtight container in the refrigerator for up to 3 days. I recommend slicing and toasting it before serving because that gives the best texture.

    You can also freeze the bread for longer storage. Let it cool completely, then wrap it tightly and freeze for up to 2 months. Thaw in the refrigerator or toast straight from frozen.

    Ingredients

    • 3 tablespoon almond flour (see my favorite on Amazon) (or 1 ⅓ tablespoon coconut flour)
    • 1 tablespoon avocado oil or melted butter or coconut oil
    • ½ teaspoon baking powder
    • 1 large egg (See notes on how to make this less "eggy")
    • tiny pinch of kosher salt

    Equipment

    • 4 inch square or round ramekin

    Method

    1. Add the oil to the bowl or ramekin and swirl around to coat. Add the rest of the ingredients and stir stir well. Tap on the counter a few times to remove air bubbles and microwave for 60-90 seconds.  You can also bake in a oven safe container for 10 minutes at 375F
    2. You can make this 90 second bread less eggy by using just an egg white as the egg yolk is where the eggy taste comes from.

      I so wanted this to be as good as the reviews are saying but I struglled after multiple attempts. Was making hamburgers on the grill and wanted this for a bun. So I first used a Campbell soup mug with the almond flour recipe. It seemed to rise a lot but I discovered it wasn't the 4" in diameter. It did seem eggy, so I picked up egg whites from the store and used 2 tablespoons as stated. I also switched to a 4" ramikan which would be a better size for my hamburger bun. Every attempt ended in a lot of banging to remove air bubbles but I saw none but cooked product showed they were there on the bottom. Anyway, the egg whites did not rise. Both attempts were flat so I went back to the whole egg. Put in toaster oven but that just made them dry. I will try browning in pan on stove next time. But any help with air bubbles or why egg whites didn't rise would be appreciated.

      I doubled the recipe, did a two to one almond to coconut flour. One whole egg and one egg white. It was SOOOO good. I made fancy tea sandwiches topped with various cooked veggies and bacon with a teaspoon of pesto. My guy loved them, too. So easy. Thank you!

      It was really good, thank you for the recipe. I used 2tbsp +1.5 tsp almond flour plus 1.5 tsp coconut flour. My container was about 5.5x5.5 so it came out thinner than written, but was perfect for breakfast with homemade keto strawberry jam/puree.

      I had read about the 90 second keto bread and was skeptical but decised to give this recipe a try. It was better than expected. I used almond flour and egg whites, not eggy at all. I used a 4” ramekin and microwaves. Texture was a bit dry, especially after toasting, but it worked great for a sabdwich. This is definitely an option for a busy morning.

      I am new to Keto - three weeks in and missed bread. I know I should limit making this but have made it 3 different ways three times this week. I liked the Almond flower best and used ghee in place of butter. Very rich and filling. I'm looking forward to trying the combo with avacado oil - it has less calories and carbs. Likely the one I SHOULD go far. Thank you for the fabulous treat.

      My microwave broke so I used the instructions for baking in the oven. The bread stuck in the ramekin. Next time I will mix it up in a bowl, spray the ramekin with cooking spray, then pour the mixture into the ramekin. The bread tasted great however.

      I made this recipe using butter and an extra T of Almond flour because my egg was extra large plus I wanted to add 1/2 tsp cinnamon and 1/2 monk fruit to try and replicate a Keto Cinnamon bread I use to buy. I had a square dish that was perfect bread slice size. I got two slices out of it, toasted one and put a thin layer of peanut butter on it. It was awesome!!!

      Your coconut flour and egg white version was my first attempt at any type of gluten-free bread after reviewing countless other recipes. Only needed 60 seconds in my microwave, then I skillet toasted and ate it with a slice of cheese. First time I've had bread in almost a year and I can't thank you enough!

      This turned out amazing! I made sausage bacon egg cheddar cheese "English muffin" sandwiches! I used my homemade almond meal that I keep slightly crunchy. Then pan seared the slices to to get them toasty. I can't wait to see what else I can do with this! I am doing the keto diet with my roommates and they are in heaven! I wish I could post a pic!

      Made this out of desperation so I didn't have to eat a plain hamburger without a bun. I used one of those big soup mugs and it made a perfect bun for slicing in half and toasting in the toaster. It stood up to the last bite and my brain said that it was not exactly bread but it was satisfyingly hamburger bun. Thanks a million for the recipe 🙂

      I have been making this for almost 6 months ish . My recipe for this yummy bread is...,instead almond flour or coconut flour only I combine them because coconut by itself is too dry and almond stays soggy instead of using half almond and half coconut I use 2Tbs almond and 1Tbs of coconut it mixes well it adds a baby powder texture which is something I have to have in my bread, soft bread is a must. I don’t use butter I only use extra extra virgin oil ( have been thinking about experimenting with other oils to see what I can come out with) and of course I use egg whites most of the time which doesn’t make it as heavy or an eggy taste. I use egg whites when it’s hot outside and I want a lighter sandwich with veggies I use whole egg when I want a heavier textured bread like when it’s cold outside and a bowl of vegetable beef or herbed tomato Soup with a Havarti / Gruyere grilled cheese Freaking Amazing & Yummy ? during breakfast I use egg whites with spices like maybe vanilla extract a little cinnamon after the microwave throw it in a little oil in the pan fry for a minute or less just to get that crunchy texture add salted butter on top and enjoy !! My point is this is one the best recipes I’ve come across because I was missing bread and I hadn’t realized just how much this bread is so easy and versatile you can change to your liking it’s easy to alter for different meals breakfast, lunch, dinner & dessert. I’m so thankful for this recipe and to top it off it hasn’t ruined my ketone levels This microwave bread recipe was a life saver for me and it’s been so fun coming up with add ons for it! Thanks so much & I hope my story (sorry it’s so long )Lol !! has helped someone out there who is struggling & missing bread this is you Holy Grail take care , wear a mask , and stay safe !!!

        You should try it and find out and let us know that’s how I started when I first started using this recipe since I’ve made my own recipe I’ll tell what I did every recipe I tried I inputted they items into my fitness app I’m using ( so many out there that count calories macros net carb you name it they count it) and I kept track with new recipes like that until I came up with one with 2 carbs abc I use religiously now because I missed bread terribly and I didn’t realize how much from grilled cheeses to my bread pudding and just a muffin with my breakfast so I came up with recipes that satisfied that craving for that meal and I stayed within my carbs per day I even went lower than I had been but my point : just go ahead and experiment it only takes 90 seconds and have fun doing it when you get one that you really like Share ! lol ?       I made the almond flour 90 second bread in the microwave, cut in half and toasted it. It was amazing. I also put a tomatoe and piece of bacon on it and it tasted so yummy.           I slice mine in like 4 slices I take a bread knife and slice I make mine in a mug so flip it over it falls out I slice warm butter & Yummy !!!
