I am a lover of chicken thighs because they have so much flavor compared to boneless chicken breasts. I prefer the simplicity of boneless and skinless thighs because they cook in less time compared to bone-in thighs. They are a cinch to cook and they are so juicy and flavorful.
In my opinion, the best way to cook them is in the oven for less mess and less hands-on time. Season them up with my delicious spice mixture and you will be making these baked chicken thighs every week for the whole family.

Boneless skinless chicken thighs - This cut of chicken without the skin or bones is going to have a quicker cooking time. If you have bone-in and skin-on chicken thighs make my crispy chicken thighs or air fryer chicken thighs instead so you can get crispy skin.
Smoked paprika - I love the flavor of smoked paprika in this spice blend. You can also use just regular paprika if you cannot find the smoked.
The rest of the simple spice rub: garlic powder, kosher salt, dried oregano, onion powder, black pepper.
How to make juicy baked boneless chicken thighs
- Line the baking sheet for less mess: I like to line a rimmed sheet pan with parchment paper or foil.
- Combine seasonings: Mix all of the seasonings together in a small bowl for easier distributing. There is enough chicken seasoning to coat both sides of 6 boneless skinless thighs quite generously.
- Prepare for baking: After I season both sides, for best results, tuck the end of each thigh under. The chicken is going to stay incredibly juicy if you do not spread the chicken thighs out flat.
- Bake: Bake in a 400 degrees F oven (200C) for 20-25 minutes. Use an instant-read thermometer inserted into the thickest part of the thigh to test that the internal temperature is 165F (74C).

- Store the leftovers in an airtight container in the fridge for up to 4 days. Freeze for up to 3 months.
- Serve the chicken with your favorite dipping sauce such as bbq sauce or ranch. Use the leftovers as meal prep.

- 6 Boneless skinless chicken thighs, (note 1)
- 1 ½ teaspoons smoked paprika, (note 2)
- 1 ½ teaspoons garlic powder
- 1 teaspoon Kosher salt
- ¾ teaspoon Oregano
- ¾ teaspoon onion powder
- ¼ teaspoon black pepper
Equipment
- Rimmed half sheet pan = 18x13 inch (46cm x 33cm)
Instructions
- Preheat the oven to 400F (200C) and line a rimmed baking sheet with foil or parchment paper.
- Combine all the spices in a small bowl. Place your boneless chicken thighs on the baking sheet flat (untucked) and season both sides generously with the seasoning mixture.
- For extra juicy chicken thighs: Place chicken thighs evenly spaced on the baking sheet and tuck the 2 sides of each chicken thigh under, so they do not dry out while cooking.
- Place into already preheated oven and bake for 20-25 minutes or until an internal temperature reaches 165F (74C). Use an instant-read thermometer inserted into the thickest part of the thigh to test that the internal temperature is 165F (74C). Let rest for 5-10 minutes before serving.
Notes
- Boneless Skinless Chicken Thighs: 6 thighs or about 2 pounds (1kg) are typically what you find in a package at most grocery stores. If you can only find bone-in chicken thighs, use this recipe instead for crispy chicken skin: Crispy Chicken Thighs
- Smoked paprika: This variety of paprika has become more popular over the years so you shouldn't have much trouble finding it. You could also use sweet paprika.
