I am a lover of chicken thighs...especially boneless skinless. They are a cinch to cook and they are so delicious. They have so much more flavor than chicken breast and not many more calories. Season them up with this delicious spice mixture and you will be making these every week for meal prep.
Perfectly cooked boneless chicken thighs
This recipe really couldn't be any easier. We simply place the chicken thighs on a sheet tray, season them, and then throw them in a 400F oven for 15 minutes. They will be juicy and perfectly cooked.
My favorite chicken seasoning
The combo of smoked paprika, garlic powder, salt, oregano, and onion powder really cannot be beat. This seasoning mixture is how I season all of my chicken when I want to just use it for salads or low carb wraps.

Baked Boneless Skinless Chicken Thighs
Ingredients
- 8 Boneless skinless chicken thighs
- 1 ½ teaspoons smoked paprika
- 1 ½ teaspoons garlic powder
- ¾ teaspoon Kosher salt
- ¾ teaspoon Oregano
- ¾ teaspoon onion powder
Instructions
- Preheat the oven to 400F and line a baking sheet with foil.
- In a small mixing bowl add all your spices. Mix to incorporate spices equally. Place your chicken thighs on the baking sheet.
- Sprinkle your seasoning equally on chicken thighs. Flip your chicken thighs and season with remainder of seasoning mixture.
- Place into already preheated oven and cook for 15 minutes or until internal temperature reaches 165F. Serve.

So I followed directions but my chicken thighs did not cook in 15 minutes. What could I have done wrong? It is pretty simple recipe. They are boneless thighs.

love the spice rub mixture on these. i am with you. i prefer thighs to breasts. we made this recipe last week and the rub was fantastic. every recipe i have made on this site has been amazing. we bought a smoker and it will be coming in a few weeks. will try this again on it! this is another recipe that is going to be added to my regular meal rotation! thank you for all of the low carb deliciouusness
