    Baked Boneless Chicken Thighs

    These rotisserie seasoned chicken thighs are ready in less than 25 minutes! If you're looking for a baked boneless chicken thigh recipe that is easy and flavorful, this is it. It's the perfect high protein meal prep for busy work weeks!

    This baked boneless skinless chicken thighs dish would be perfect served alongside the Baked Feta Pasta with Spaghetti Squash, Broccoli Rice Casserole, or Keto Mac and Cheese. Or you can chop it up and serve it on a salad or with a dip on the side.

    I am a lover of chicken thighs...especially boneless skinless.  They are a cinch to cook and they are so delicious.  They have so much more flavor than chicken breast and not many more calories.  Season them up with this delicious spice mixture and you will be making these every week for meal prep.

    Ingredients needed

    8 Boneless skinless chicken thighs - this cut of chicken without the skin or bones is going to cook the quickest. If you have bone-in chicken thighs, make my crispy chicken thighs instead!

    1 ½ teaspoons smoked paprika - I love the flavor of smoked paprika in this spice blend. You can also use just regular paprika if you cannot find the smoked.

    1 ½ teaspoons garlic powder

    ¾ teaspoon Kosher salt

    ¾ teaspoon Oregano

    ¾ teaspoon onion powder

    Pepper to taste

    This baked boneless skinless chicken thighs recipe really couldn't be any easier.  We simply place the chicken thighs on a sheet tray, season them, and then throw them in a 400F oven for 15-20 minutes.  You will have juicy chicken thighs in no time!

    Pro tips

    • Line your baking sheet with foil for less mess.
    • smoked paprika is actually quite common and can be found in most grocery stores.  You can use Hungarian paprika, but you will be missing that delicious smoky flavor!
    • Use a meat thermometer to make sure your baked boneless chicken thighs are cooked to at least 165F.
    • Store the leftovers in an airtight container in the fridge for up to 4 days. Freeze for up to 3 months.
    • Serve with a side of vegetables or potatoes as a side dish.

    How long does it take to bake boneless chicken thighs at 400 degrees?

    It will take about 15-20 minutes depending on the size and thickness of your chicken thighs.

    What temperature should boneless chicken thighs be cooked to?

    All poultry should be cooked to a minimum of 165F. Test the internal temperature using a probe meat thermometer inserted into the center of the chicken thigh.

    Ingredients

    • 8 Boneless skinless chicken thighs
    • 1 ½ teaspoons smoked paprika
    • 1 ½ teaspoons garlic powder
    • ¾ teaspoon Kosher salt
    • ¾ teaspoon Oregano

    Instructions

    • Preheat the oven to 400F and line a baking sheet with foil.
    • In a small mixing bowl combine your spices. Place your chicken thighs on the baking sheet.
    • Sprinkle your seasoning evenly on chicken thighs. Flip your chicken thighs and season with remainder of seasoning mixture.
    • Place into already preheated oven and bake for 15-20 minutes or until internal temperature reaches 165F. Serve.

      The seasoning quantity seems a bit skimpy for 8 thighs. How are you spreading 3/4 tsp onion powder 8 ways?

      love the spice rub mixture on these. i am with you. i prefer thighs to breasts. we made this recipe last week and the rub was fantastic. every recipe i have made on this site has been amazing. we bought a smoker and it will be coming in a few weeks. will try this again on it! this is another recipe that is going to be added to my regular meal rotation! thank you for all of the low carb deliciouusness
