12 ounces frozen butternut squash - frozen butternut squash chunks are such an amazing freezer staple! Butternut squash is so hard to chop and freezing is just as good as fresh.
1 red bell pepper, sliced - you could also use any color of bell pepper here.
½ teaspoon Italian seasoning - For a more cajun flare, use cajun seasoning instead. You can also add some cayenne pepper for some added heat.
1 teaspoon garlic powder - alternatively you can use a few cloves of garlic.
1 teaspoon kosher salt
½ teaspoon black pepper
2 tablespoons avocado oil - you can use any oil you like. Olive oil works too!
12 ounces andouille sausage (4 links) - The Aidells sausages I used come 4 in a pack but you could easily put more andouille sausages on the tray. You could even add shrimp or other seafood to the sheet tray halfway through the cooking time!

Step 1 - Preheat the oven to 400F. In a medium size mixing bowl, combine your veggies, seasonings and avocado oil. Toss to coat.
Step 2 - Spread the seasoned vegetables on the sheet tray. Lay your andouille sausage evenly onto baking sheet in between your veggies. Bake in the oven for 25 minutes or until the sausage reaches an internal temperature of 165F using a problem meat thermometer.

- If you want to cut down on even more dishes, toss the veggies with the seasonings and the oil directly on the sheet pan.
- Line the sheet pan with parchment paper for even easier cleanup
