    Sheet Pan Andouille Sausage Recipe

    This sheet pan andouille sausage recipe is the perfect blend of simplicity and flavor. For this sausage sheet pan dinner we combine freezer staples, simple seasonings and cajun sausage to make a 30 minute meal that is healthy and bursting with flavor.

    I know most busy families love easy sheet pan dinners.  This sausage sheet pan dinner is no exception!  We use flavorful andouille sausage, red bell peppers, butternut squash (frozen for ease), and simple seasonings to bring this recipe to life.  Andouille sausage recipes like this are something you can definitely make on repeat for dinner, or you can meal prep them for easy lunches.

    What I like most about this andouille sausage recipe is it is very versatile.  You can use andouille chicken sausage and different vegetables such as onions or corn on the Cobb.  The recipe uses only a bowl and a sheet pan, no pot or skillet required.  I love using sheet pans for quick dinners!  Check out my recipes for Sheet Pan Chicken Sausage and peppers, and One Pan Chicken and Veggies.

    It is a great source of protein and is low in carbohydrates which makes this sausage sheet pan dinner perfect for a low carb diet.

    Ingredients needed

    12 ounces frozen butternut squash - frozen butternut squash chunks are such an amazing freezer staple!  Butternut squash is so hard to chop and freezing is just as good as fresh.

    1 red bell pepper, sliced - you could also use any color of bell pepper here.

    ½ teaspoon Italian seasoning - For a more cajun flare, use cajun seasoning instead.  You can also add some cayenne pepper for some added heat.

    1 teaspoon garlic powder - alternatively you can use a few cloves of garlic.

    1 teaspoon kosher salt

    ½ teaspoon black pepper

    2 tablespoons avocado oil - you can use any oil you like.  Olive oil works too!

    12 ounces andouille sausage (4 links) - The Aidells sausages I used come 4 in a pack but you could easily put more andouille sausages on the tray.  You could even add shrimp or other seafood to the sheet tray halfway through the cooking time!

    Step 1 - Preheat the oven to 400F. In a medium size mixing bowl, combine your veggies, seasonings and avocado oil. Toss to coat.

    Step 2 - Spread the seasoned vegetables on the sheet tray. Lay your andouille sausage evenly onto baking sheet in between your veggies. Bake in the oven for 25 minutes or until the sausage reaches an internal temperature of 165F using a problem meat thermometer.

    Tips to make this sausage sheet pan dinner

    • If you want to cut down on even more dishes, toss the veggies with the seasonings and the oil directly on the sheet pan.
    • Line the sheet pan with parchment paper for even easier cleanup

    Andouille sausage recipe serving suggestions

    • Serve over rice or pasta for a hearty, family friendly dinner.  For low carb or keto you can use a keto friendly rice like cauliflower rice or zucchini noodles.  
    • Serve with hamburger buns and melt cheese on top.
    • Serve with a side of steamed collard greens for an even bigger veggie punch!
