Keto Mug Cake - Chocolate, Vanilla, or Peanut Butter

Ingredients
- 1 Tablespoon Butter, melted
- 1 Tablespoon Coconut flour or 3 tablespoon Almond flour
- 2 Tablespoons sugar free granulated sweetener (see my favorite on Amazon)
- 1 Tablespoons Cocoa powder, (For Chocolate Version)
- 1 Tablespoon Sugar free Peanut butter, (For Peanut Butter Version)
- ½ teaspoon Baking powder
- 1 Egg, beaten
- Splash of vanilla
- 1 Tablespoon Sugar free Chocolate Chips
Instructions
For Chocolate
- In a microwave safe coffee mug, melt the butter in the microwave for 10 seconds. Add the coconut flour or almond flour, sweetener, cocoa powder, baking powder, vanilla and beaten egg. Mix well. Microwave on high for 60 seconds, being sure not to overcook. If you overcook it, it will be dry. Top with sugar free chocolate chips of desired.
For Vanilla
- In a microwave safe coffee mug, melt the butter in the microwave for 10 seconds. Add the coconut flour or almond flour, sweetener, baking powder, vanilla and beaten egg. Mix well. Microwave on high for 60 seconds, being sure not to overcook. If you overcook it, it will be dry. Top with sugar free chocolate chips of desired or mix in before cooking.
For Peanut Butter
- In a microwave safe coffee mug, melt the butter in the microwave for 10 seconds. Add the coconut flour or almond flour, sweetener, baking powder, vanilla and beaten egg. Mix well. Swirl in the peanut butter. Microwave on high for 60 seconds, being sure not to overcook. If you overcook it, it will be dry. Top with sugar free chocolate chips of desired.
Notes
- Baking Instructions: Use an oven safe ramekin. Bake in the oven at 350 for 15-20 minutes.

I think I figured out why the recipes in my Carb Manager app has so many more total carbs than your recipe.I think the people who enter the macros on the app are not using the correct amounts to measure by. They are using incorrect forms of measure when inputting their information. ”
Someone even put your recipe in the app and it is showing up with 26 carbs per serving. Now I know from reading your recipe that is false information.

Why is there such a discrepancy of total carbs between your recipe and what I found on Carb Manager app. The difference I see is your recipe only calls for one Tbs of almond flour whereas the recipe on carb manager is two Tbs.

Yes, and no one else has thought it was too sweet to my knowledge. What sweetener did you use? Is it a 1 for 1 substitute for sugar?

This is SO good! I have never made a microwave mug cake and I am so glad this recipe was my first. I made the vanilla mug cake and used coconut flour, allulose for the sweetner, didn't have choc chips and it turned out delicious! So fluffy! For me personally next time I'm going to sub the egg for arrowroot flour just to see if it could be done because I like saving my eggs for breakfast & I'm going to reduce the allulose to 1 & 1/2 Tbspn because my sugar tolerance has reduced hence the cake was a little too sweet for me. Overall I am so glad I found this recipe. Thank you Jennifer!

I make the mug cake vanilla recipe and cook it in a flat bottom bowl or plate, then eat it with sugar free pancake syrup for breakfast, as a pancake!

The cakes are great, but just a warning, the carbs are really high as 2 TBSP of erythritol or monkfruit sweetener equals 24 carbs.. blessings!

Those are sugar alcohols and do not count as the body does not process them. the FDA requires they be added to carbs

OMG this is so good - I made two in the past 15 minutes. Used almond flour for both, first just vanilla with splash of lemon extract and the second I tried with cacao powder. This recipe is dangerous! Thanks for sharing though 🙂

I’m honestly surprised at how good this is. We have an amazing keto bakery near us, so we are pretty spoiled (and picky). But it’s expensive and not open when those 9pm cravings hit. These little cakes are a perfect fit. Sufficient caky texture and just sweet enough without being cloying. Peanut butter version topped with a few sugar-free chocolate chips is awesome! But so is the plain vanilla version (we like this one topped with a pat of butter actually). Generally I triple the recipe and use 6 Tbspns almond flour and 1 tbspn coconut flour which gives a great texture and doesn’t taste too coconutty.

Surprised at how good this is! I made the chocolate one using 1 Tbsp coconut flour instead of 3 Tbsp almond flour. I left out the chocolate chips and we had it with a little whipped cream. Delicious and would definitely make again.

All great recipes. However, I would have thought you would have topped the Vanilla Cake with White Chocolate Chips. And the Peanut Butter Cake with Peanut Butter Chips...instead of Chocolate Chips on all three versions.

I made the chocolate version with Hershey's special dark cocoa and I substituted the sweetener for 3 teaspoons of Truvia, which was the PERFECT balance! I made 2 of the peanut butter one the other night, accidentally putting cocoa powder in one so I kept it up and added a few lily chips on top of that one-Oh em gee! So amazing and I too have made several mug cakes through the years! These are superior. So I couldn't mix them well enough in the ramekin so I mixed in a small bowl then poured into ramekin sprayed w/ olive oil spray. So close to a traditional flour cake I couldn't believe it! make this and toss all other recipes. A real keeper, thank you for posting!
