    Keto Mug Cake - Chocolate, Vanilla, or Peanut Butter

    This chocolate keto mug cake in the microwave is another one of my favorite quick keto desserts! I give instructions for vanilla, chocolate, and peanut butter versions and you can make it with almond flour or coconut flour.  Keto chocolate mug cake is my favorite keto dessert recipe!

    Do you know how much I love my microwave?  I am team microwave!  Keto Mug Cake is another one of my favorite keto dessert recipes using that trusty machine!

    My 90 second Low Carb Bread is another one of my microwave recipes.  So good for sandwiches!

    This keto mug cake is so easy to make with only 6 ingredients.

    It's also easy and ready in under 5 minutes!

    For this keto mug cake, you can make it peanut butter, chocolate, or vanilla.

    Chocolate Keto Mug Cake

    For a keto chocolate mug cake, in a microwave safe coffee mug, melt the butter in the microwave for 10 seconds.  Add the coconut flour or almond flour, sweetener, cocoa powder, baking powder, vanilla and beaten egg.  Mix well.
    To make this keto chocolate dessert, microwave on high for 60 seconds, being sure not to overcook.  If you overcook it, it will be dry. Top with sugar free chocolate chips of desired.
    How to make a bulk mix

    You can scale this up however you want. For example:

    10 servings:

    • 30 tablespoon almond flour (1 ⅞ cups)
    • 10 tablespoon cocoa powder (just over ½ cup)
    • 20 tablespoon sweetener (1 ¼ cups)
    • 5 teaspoon baking powder

    Mix it really well and store in a jar.

    How much to use per mug cake

    Each time you want one, just scoop:

    • 6 tablespoons of the dry mix

    That scoop already includes the right ratio of everything, including the baking powder.

    One small tip

    Because baking powder can settle, give the jar a quick shake or stir before scooping, especially after it's been sitting a few days.

    Peanut Butter

    In a microwave safe coffee mug, melt the butter in the microwave for 10 seconds.  Swirl around the inside of the mug or ramekin.

    Add the coconut flour or almond flour, sweetener, baking powder, vanilla and beaten egg.  Mix well. Swirl in the peanut butter.
    Microwave on high for 60 seconds, being sure not to overcook.  If you overcook it, it will be dry. Top with sugar free chocolate chips if desired (highly recommend to make this keto dessert over the top).

    Vanilla

    In a microwave safe coffee mug, melt the butter in the microwave for 10 seconds.  Add the coconut flour or almond flour, sweetener, baking powder, vanilla and beaten egg.  Mix well.
    Microwave on high for 60 seconds, being sure not to overcook.  If you overcook it, it will be dry. Top with sugar free chocolate chips of desired or mix in before cooking.

    Toppings

    I like to top these keto mug cakes with sugar free chocolate chips, sugar free chocolate syrup, or whipped cream.

    Ingredients

    • 1 Tablespoon Butter, melted
    • 1 Tablespoon Coconut flour or 3 tablespoon Almond flour (click to see my favorite)
    • 2 Tablespoons sugar free granulated sweetener (click to see my favorite)
    • 1 Tablespoons Cocoa powder (For Chocolate Version)
    • 1 Tablespoon Sugar free Peanut butter (For Peanut Butter Version)
    • ½ teaspoon Baking powder
    • 1 Egg, beaten
    • Splash of vanilla
    • 1 Tablespoon Sugar free Chocolate Chips

    Method

    For Chocolate
    1. In a microwave safe coffee mug, melt the butter in the microwave for 10 seconds.  Add the coconut flour or almond flour, sweetener, cocoa powder, baking powder, vanilla and beaten egg.  Mix well.  Microwave on high for 60 seconds, being sure not to overcook.  If you overcook it, it will be dry. Top with sugar free chocolate chips of desired.
    For Vanilla
    1. In a microwave safe coffee mug, melt the butter in the microwave for 10 seconds.  Add the coconut flour or almond flour, sweetener, baking powder, vanilla and beaten egg.  Mix well.  Microwave on high for 60 seconds, being sure not to overcook.  If you overcook it, it will be dry. Top with sugar free chocolate chips of desired or mix in before cooking.
    For Peanut Butter
    1. In a microwave safe coffee mug, melt the butter in the microwave for 10 seconds.  Add the coconut flour or almond flour, sweetener, baking powder, vanilla and beaten egg.  Mix well. Swirl in the peanut butter.  Microwave on high for 60 seconds, being sure not to overcook.  If you overcook it, it will be dry. Top with sugar free chocolate chips of desired.

    Notes

    Nutrition for chocolate mug cake with almond flour and no chocolate chips: 312 cal / 28g fat / 7 carbs / 4g fiber / 12g protein
    Nutrition for peanut butter with almond flour and no chocolate chips: 395 cal / 35g fat / 8 carbs / 4g fiber / 15g protein
    Nutrition for Vanilla with almond flour and no chocolate chips: 303 cal / 28g fat / 5 carbs / 2g fiber / 11g protein
    • Baking Instructions: Use an oven safe ramekin.  Bake in the oven at 350 for 15-20 minutes.

      This is a DELICIOUS mug cake. I made a the plain chocolate cake first and it was so RICH!! I just made it again but decided to put a tbsp of peanut butter in the middle. It was AMAZING!! I definitely recommend this recipe!

      I wanted something SUPER RICH so... 2T butter, 2 yolks instead of 1 whole egg, 1T Swerve plus pinch stevia, 1T coconut flour and about 10 76% chocolate chips (plus the rest of the stuff). Nuked only 45 seconds (will try only 35 next time). It was perfect! Thank you for the recipe.

      Yo so I follow a loosely keto diet simply because of allergies I have rather than to specifically loose weight- it happens to mostly be foods I can actually have. So I substituted the flour with chickpea on a whim and honey with a sprinkle of coconut sugar for the sweetener, and did two egg whites for the egg bc I can’t have the yolks and doubled the “pb” which I used soy butter for and it was amazing. Like seriously the best mug cake texture I’ve ever ended up with. It was a very nutty flavored cake with a tiny tight crumb similar to somewhere between a higher end bakery cake and angel food. Super delicious. Most mug cakes are nasty if you don’t eat them scalding hot but this one was even good cold. I did have to add come cooking time in 15 second increments, and it nearly doubled the amount I was expecting, but it was perfect.
      I followed the amount called for almond flour rather than coconut so perhaps that may be why. Regardless- so glad I found this recipe as it’s my new favorite and go-to from now on. My big kids will love it too and they’re picky.
      Oh! It also didn’t stick horribly like some do, either. When I melted the butter, I added a bit extra and swished it all along the inside of the cup.

      Chocolate one was so good! I didn't have enough butter so I substituted 1/2 the quantity of butter with coconut oil and cooked it in the microwave (opted to top the mug cake with a naughty amount of sugarfree choc chips). It was super moist and yummy!

      So good and curbed my sugar craving so quickly! I followed the recipe as directed using coconut butter, coconut flour, Lakanto, but added a few bits of pecans to give it a “butter pecan” flavor...wow! It was so filling and delicious! Thank you so much for this delicious recipe!

      Did a dry run on the chocolate recipe with one in the microwave and one in the oven. Oven definitely more moist. Microwave version really puffed up, almost overflowing the ramekin, but was dry after the minimum cook time suggested. The oven one was less puffed up but gave a better presentation and moister even after using the maximum cooking time suggested. Also, I will try and see if adding a little extra sweetener (Truvia) will help. It was not very sweet tasting for a dessert. Hoping this doesn’t make it drier for my dinner guests tomorrow night.

      Made the chocolate with coconut flour. Microwaved for 45 seconds then made a hole in the middle and put a tablespoon melted peanut butter. Delicious!

      This was amazing. I have been searching for a good Keto version of a vanilla birthday cake and this hits the spot. Finally my search is over. It’s fluffy, not eggy, or wet and had a great vanilla flavor. The only reason I gave it 4 stars is because I made a few adaptions. Instead of butter, I used Mayo, because That’s what I had available. I used almond flour, but replaced one of the recommended Three TBSs with vanilla protein powder, because it seems to add more fluff and rise to mug cakes. I only used 1 TBS sweetener, because of the sweetness in the protein powder. Then I added a pinch of salt and a tiny dab of bake batter extract with the vanilla. I also had to microwave for 30 extra seconds. This was so good. Thanks for sharing such a delicious recipe. I am excited to try the other two versions.

      I made the chocolate recipe, followed exactly. It came out well. Quite spring and a little eggy. Satisfied the craving for a quick dessert. I will reduce the egg to half next time to see if it is denser that way.

      I made the chocolate mug cake tonight using coconut flour. It was amazing! So amazing that I let my kids try it and I got up to put a load of laundry in the dryer. When I returned my mug cake had vanished. They’re response was they needed a full taste test! Needless to say, I’m glad it was easy to make another mug.

      So I made the chocolate one and it was great. I plugged in the recipe into my my fitness app the carbs amount to 20g. And that's with only 1 tbsp of swerve. The numbers you listed for the carbs was 7 carbs? Is that supposed to be net carbs or regular carbs?

          So I'm only 3 weeks into keto so I'm definitely not experienced, on the package of swerve it says 1 tsp has 4 carbs. I really enjoyed this cake is why I'm asking. When I plug in all the ingredients in to make a recipe on my fitness app the total came out with 20 grabs and I was shocked. I double checked the Ingredients and the swerve was what was high. So I think I'm missing somthing.

          Hey Samantha! The carbs in swerve are erythritol which is a sugar alcohol that our body doesn’t use, so you can subtract that from total carbs and so your net carbs should be lower. Hope that helps. Happy Keto-ing!

        I am sure it was net carbs and your swerve shouldn’t be any carbs, if it is, you should change your keto sweetener IMO..I use pyure and it’s zero carbs. The carbs here are likely the flour, even baking powder has carbs.

      Delicious, so easy! Vanilla is our favorite. I use only 1 TBS Swerve, add cinnamon. We serve with a few spoonfuls of Keto brand ice cream - Sea Salt Caramel. Love this. Thank you Jennifer!
