Keto Mug Cake - Chocolate, Vanilla, or Peanut Butter

Ingredients
- 1 Tablespoon Butter, melted
- 1 Tablespoon Coconut flour or 3 tablespoon Almond flour
- 2 Tablespoons sugar free granulated sweetener (see my favorite on Amazon)
- 1 Tablespoons Cocoa powder, (For Chocolate Version)
- 1 Tablespoon Sugar free Peanut butter, (For Peanut Butter Version)
- ½ teaspoon Baking powder
- 1 Egg, beaten
- Splash of vanilla
- 1 Tablespoon Sugar free Chocolate Chips
Instructions
For Chocolate
- In a microwave safe coffee mug, melt the butter in the microwave for 10 seconds. Add the coconut flour or almond flour, sweetener, cocoa powder, baking powder, vanilla and beaten egg. Mix well. Microwave on high for 60 seconds, being sure not to overcook. If you overcook it, it will be dry. Top with sugar free chocolate chips of desired.
For Vanilla
- In a microwave safe coffee mug, melt the butter in the microwave for 10 seconds. Add the coconut flour or almond flour, sweetener, baking powder, vanilla and beaten egg. Mix well. Microwave on high for 60 seconds, being sure not to overcook. If you overcook it, it will be dry. Top with sugar free chocolate chips of desired or mix in before cooking.
For Peanut Butter
- In a microwave safe coffee mug, melt the butter in the microwave for 10 seconds. Add the coconut flour or almond flour, sweetener, baking powder, vanilla and beaten egg. Mix well. Swirl in the peanut butter. Microwave on high for 60 seconds, being sure not to overcook. If you overcook it, it will be dry. Top with sugar free chocolate chips of desired.
Notes
- Baking Instructions: Use an oven safe ramekin. Bake in the oven at 350 for 15-20 minutes.

Best ever! I used Hershey’s special dark cocoa (100%) and made my own clarified butter topped it with 4 raw pecans and it was fantastic! Looked like a dark devil’s food cake and 2 T of erythritol was not too sweet for me! Now if I could only get my diabetic brother to try it!

I've made these and they are delicious, but I found that 2 tablespoons sweetener was way too much. I only use 1 tablespoon and they are plenty sweet enough without the extra carbs and aftertaste.

Enjoyed the taste. I did not use a lot of sweetener and the result was a muffin like cake in a mug. Also the taste was not super rich chocolate. If you’re looking for a super chocolatey cake use more cocoa. Yum!

Made one chocolate and one peanut butter with chocolate chips. Had a little cold coffee so added one tablespoon to the chocolate! Yum!!! My husband wouldn’t share his peanut butter one haha. Total fan of these super easy treats??

First off let me start by saying that my husband hates cake (would rather eat pie) — were new to keto and were both craving something sweet tonight .. so I made myself a chocolate cake and my husband the peanut butter cake. He devoured it and so did I! Both were AMAZING and DELICIOUS and we are excited to be able to indulge every now and then and not feel super guilty about it!

I added cream cheese. 2 tbsp cream cheese, heat for 20 seconds in the microwave, mix in 1/2 tsp Truvia (sweetener). Once mug cake is fully blended, drop by spoonful into batter, then swirl one time. Microwave for 1 min, 20 seconds.

I'm paleo so I've swapped all sweetners for coconut sugar and maple syrup.
I only needed 1tb as I don't like sweet things anymore.
Don't even eat chocolate chocolate anymore either.

I just tried the chocolate mug cake and it was no different then a real cake. I added 5 raspberries before cooking in the microwave and and it was kore delicious with sourness of raspberries.

I made this and the batter looked VERY thick... I added a tablespoon of almond milk... it tasted okay but not sure why it seemed rather dense. I used it as a trifle cake, layered with HWC and fresh raspberries, so it was still quite tasty. Served in stemmed wine glasses for effect.
Any idea why it came out so dense? I made the vanilla version.
