Let me show you a quick and easy way to cook delicious chicken thighs! This recipe is a perfect first step to several wonderful chicken creations!
This recipe is the perfect chicken for juicy shredded chicken every time. I prefer bone in chicken thighs over chicken breast because they have so much more flavor! I then like to also use the remaining chicken bone broth for keto egg drop soup (recipe coming soon)!
How to make bone in chicken thighs in the instant pot
The first step is we have to remove the skin. Chicken skin in the instant pot is not good at all. It is flabby and much better off being removed. I love to cook them separately until crispy on a flat baking sheet and eat them as a delicious snack. Don't knock it until you try it!
Now we can add the chicken thighs and the broth to the instant pot and cook them under high pressure for 35 minutes. I like to cook them this long because they get so tender they fall off the bone. This also helps the bones release minerals and the remaining chicken broth turns into the most amazing chicken bone broth. So perfect for cold and flu season!
I intentionally didn't season this chicken because when you go to use it in a recipe, you can season it how you like. Instant Pot Bone In Chicken Thighs
- 10 Bone in chicken thighs
- 1 cup chicken broth
- Electric Pressure Cooker (Instant Pot)
- Remove the skins from your chicken thighs and reserve the chicken thigh skin for another recipe, if desired. Add the bone in chicken thighs to your instant pot along with 1 cup chicken broth.
- Seal the lid and cook under high pressure for 35 minutes. Release pressure and remove the chicken with a slotted spoon. The meat will be very tender and fall of the bone.
