Low Carb Lemon Chicken Soup
Ingredients
- 2 Tablespoons butter
- 1 Cup diced carrots
- 1 Cup diced celery
- ½ Cup diced onion
- 8 Ounces Mushrooms, sliced
- 4 Cloves Garlic, minced
- 2 Boneless Skinless Chicken Breast, cut into 1 inch pieces
- 4 Cups chicken broth
- 1 teaspoon dried oregano
- ¼ Cup chopped fresh dill
- zest and juice from one lemon
- salt and pepper to taste
Instructions
- Heat the butter in a large heavy pot over medium heat. Stir in the onion, carrot, and celery and cook until softened, about 5-8 minutes. Stir in the minced garlic , sliced mushrooms and chicken breast. Cook until the chicken is cooked through, about 8 minutes.
- Add in the chicken broth, oregano, dill, lemon juice and zest, and season with salt and pepper. Serve
