    Looking for a hearty skillet meal in just a few minutes?! This Keto ground beef recipe is loaded with ground beef, zucchini and keto friendly beans. This comfort food is perfect for meal prep or just a quick weekday dinner!

    A lot of times keto ground beef recipes can be on the heavy side...they may contain cream cheese, bacon, or heavy cream to make a rich sauce.  I wanted to keep this recipe light and veggie forward.  If you're looking for gluten-free pizza substitute rich in mozzarella cheese goodness, checkout my keto ground beef casserole.

    These are my favorite types of low-carb meals...easy, nothing fancy, but delicious, healthy and full of flavor.  I am loving these Eden black soy beans!  They are so delicious, full of fiber, and now I can eat beans again!  I find them on Amazon.

    Keto ground beef recipes

    Ground beef is one of the most popular proteins on the keto diet, and with good reason!  It is budget friendly, delicious, and nutritious.  Here are a few of my favorite keto ground beef recipes:

    Ingredients needed

    1 pound Ground Beef

    ½ teaspoon Kosher salt

    ¼ teaspoon black pepper

    1 Green Bell Pepper-chopped 

    2 medium Zucchini, chopped 

    1 cup Eden Black Soy Beans, rinsed

    2 tablespoons tomato paste

    How to make this easy keto ground beef recipe

    This section explains how to make this keto ground beef recipe, step by step. For a full printable recipe, see the recipe card below.

    In a large skillet over medium-high heat, combine the ground beef, salt and pepper. Cook and crumble the ground beef until it is cooked through. Remove any excess grease from the pan.

    Stir in the green bell pepper and zucchini. Reduce the heat to medium and continue to cook for 10 minutes more, until the zucchini is fork tender.

    Mix in the black soy beans and tomato paste. Let cook for 5 minutes more. Season with salt and pepper to taste and serve.

    Top with shredded cheddar cheese, cilantro, sour cream, and salsa if desired!  This keto ground beef recipe would be amazing over cauliflower rice.

    Are black beans keto friendly?

    Traditional black beans are not keto friendly but these black soy beans are!  1 cup of the fiber filled beans are all you need for this keto ground beef recipe.  They come packed in kombu seaweed which is like a jelly so make sure you rinse them really well before adding them to your dish.
