A lot of times keto ground beef recipes can be on the heavy side...they may contain cream cheese, bacon, or heavy cream to make a rich sauce. I wanted to keep this recipe light and veggie forward. 1 pound Ground Beef
½ teaspoon Kosher salt
¼ teaspoon black pepper
1 Green Bell Pepper-chopped
2 medium Zucchini, chopped
1 cup Eden Black Soy Beans, rinsed
2 tablespoons tomato paste
How to make this easy keto ground beef recipe

In a large skillet over medium-high heat, combine the ground beef, salt and pepper. Cook and crumble the ground beef until it is cooked through. Remove any excess grease from the pan.
Stir in the green bell pepper and zucchini. Reduce the heat to medium and continue to cook for 10 minutes more, until the zucchini is fork tender.
Mix in the black soy beans and tomato paste. Let cook for 5 minutes more. Season with salt and pepper to taste and serve.
Top with shredded cheddar cheese, cilantro, sour cream, and salsa if desired! This keto ground beef recipe would be amazing over cauliflower rice.
Are black beans keto friendly?
Traditional black beans are not keto friendly but these black soy beans are! 1 cup of the fiber filled beans are all you need for this keto ground beef recipe. They come packed in kombu seaweed which is like a jelly so make sure you rinse them really well before adding them to your dish.

Keto Ground Beef and Zucchini Skillet Recipe
