What is Peanut Butter Powder?
Powdered peanut butter is made from peanuts that have been ground and then most of the oil has been removed. It is great to use in baking because it doesn't add a lot of liquid but provides all of that amazing peanut butter flavor. It is also perfect for keto baking because it is sugar free and only adds 1 net carb per muffin.

Keto Peanut Butter and Jelly Muffins

Ingredients
- 2 ½ cups almond flour (see my favorite on Amazon)
- 1 cup peanut butter powder
- ½ cup sugar free granulated sweetener (see my favorite on Amazon)
- 1 teaspoon baking soda
- ¼ teaspoon kosher salt
- 3 large eggs, beaten
- 8 ounces fat free plain Greek yogurt
- 2 teaspoons Vanilla Extract
- ¼ cup sugar free jelly

Instructions
- Pre-heat the oven to 350F and line a muffin pan with liners. Spray the inside of the liners with cooking spray.
- Combine the almond flour, peanut butter powder, sweetener, salt, and baking soda in a large mixing bowl until fully combined. Stir in the eggs, greek yogurt and vanilla extract until mixed well.
- Divide the batter evenly between the 12 muffin cups. Add 1 teaspoon of jelly to the top of each muffin and swirl in with a toothpick. Bake in the oven for 18-20 minutes.

These were AMAZING! I used my own jam recipe, raspberry, and just splendid! It did make 17 muffins though - not a problem here!! Question though… I don’t have a lot of experience with freezing keto/low carb baking… do you think these would freeze well?
